Presentation of the wine

What an intoxicating feeling!

Ever since we are about to breathe the essence of our Merlot wine by delicately swaying the fine crystal glass between our fingers.

The organoleptic characteristics of our Merlot red wine laced with Sangiovese are known to all wine lovers, who consider the vine to bring roundness and softness.

The winemaking is characterized by an alcohol content of around 14.5°.

Our wine is strong and full-bodied, an impenetrable red with an intense aroma with layers of tannin and a beautiful spicy fruit finish with a succulent and compact flavour. Upon tasting, Merlot is a correct, deep, persistent and basically solid wine, often accompanied by grassy notes and the fruit of the synergy between man, woman and nature and therefore the name “Sinergia” on the label was imposed on it

Vigneto

Sulle pendici dei Colli del Trasimeno c’è Il vigneto dell’Azienda Agrituristica Le Case Rosse di Montebuono (Magione, PG) esposto a sud verso la verde valle Umbra.
I vitigni sono il Merlot, il San Giovese ed il Grechetto.
Il vitigno Merlot ha foglia media, pentagonale, trilobata e multilobata. Il grappolo medio, piramidale più o meno spargolo, con una o due ali e peduncolo legnoso di colore rosato; acino medio, rotondo di colore blu-nero con buccia di media consistenza ricoperta da abbondante pruina.
Le caratteristiche organolettiche del vino rosso 100% Merlot sono universalmente note a tutti gli amanti del vino, che considerano il vitigno portatore di rotondità e morbidezza. All’assaggio, il Merlot risulta un vino profondo, persistente e tendenzialmente solido, spesso accompagnato da note erbose e boscose.
La coltivazione Biologica e il rispetto della biodiversità della terra calcarea di coltivazione sono una scelta etica onerosa ma motivata dalla volontà di inserirsi in un sistema naturale dove l’intervento dell’uomo si limita a seguirne i ritmi circadiani.
La vinificazione è caratterizzata da una gradazione alcoolica intorno ai 14,5°. Il nostro vino è forte e corposo, rosso impenetrabile dal profumo intenso con strati di tannino ed un bel finale speziato di frutta con sapore succulento e compatto

Collection

The story of this wine began on 09/14/2020.
The grapes harvested strictly by hand and carefully selected were placed in small boxes and arrived in the cellar.
“It was a good meeting” says Anna, “because the grapes were beautiful, intact, sweet…. definitely a good start.”

Destemming & Fermentation

Once the destemming was carried out, the peels and juice immediately reached container No. 12, and the following evening the fermentation began.
The temperature was carefully controlled and kept constant at 25°C and the mass homogenized 2 times a day.

This wise initial “care” allowed a constant decrease in the sugar concentration as desired to obtain the best result.
In fact, every day the mostimeter gave reassurances on the quality of the future wine

Delastage

On 22/09, when the sugar had reached the desired concentration (equal to 10.10 grams/liter) the “delastage” was carried out: the must was completely separated from the skins and immediately afterward reinserted to cover the skins themselves. This intervention is very important for the reactivation of the yeasts and the oxygenation of the must.

Racking

On 03/10 the sugar had completely transformed into alcohol, but we decided to wait another 4 days before separating the skins from the wine because the pomace still had a lot of goodness to give it… it was a very rich grape in both color and aroma !!

After 23 days of coexistence in the tank, on 07/10 the “drawing off” was carried out and it was finally possible to baptize the former must with the name Vino Nuovo…. It was a great day! It was a great day!

Anna says “Its intense and impenetrable purple color enchanted me immediately and every time it was decanted into another barrel, its clarity and reflections increased”.
Tastings then followed and time continued to enrich the wine.
In May it was ready to be bottled

“It was a beautiful journey we took together, the wine expressed itself in its splendor and I accepted its suggestions and its evolution trying to satisfy its needs.”

Now another journey has begun, perhaps even more interesting, called “bottle refinement”: interweaving of aromas and flavors that will give emotions and thoughts to those who want to encounter this infinite magic. Thanks and credit to those who cultivated and cared for the grapes with such passion… the wine will give us back its gratitude for having loved and respected it.
