The story of this wine began on 09/14/2020.
The grapes harvested strictly by hand and carefully selected were placed in small boxes and arrived in the cellar.
“It was a good meeting” says Anna, “because the grapes were beautiful, intact, sweet…. definitely a good start.”
Destemming & Fermentation
Once the destemming was carried out, the peels and juice immediately reached container No. 12, and the following evening the fermentation began.
The temperature was carefully controlled and kept constant at 25°C and the mass homogenized 2 times a day.
This wise initial “care” allowed a constant decrease in the sugar concentration as desired to obtain the best result.
In fact, every day the mostimeter gave reassurances on the quality of the future wine
Delastage
On 22/09, when the sugar had reached the desired concentration (equal to 10.10 grams/liter) the “delastage” was carried out: the must was completely separated from the skins and immediately afterward reinserted to cover the skins themselves. This intervention is very important for the reactivation of the yeasts and the oxygenation of the must.
Racking
On 03/10 the sugar had completely transformed into alcohol, but we decided to wait another 4 days before separating the skins from the wine because the pomace still had a lot of goodness to give it… it was a very rich grape in both color and aroma !!
After 23 days of coexistence in the tank, on 07/10 the “drawing off” was carried out and it was finally possible to baptize the former must with the name Vino Nuovo…. It was a great day! It was a great day!
Anna says “Its intense and impenetrable purple color enchanted me immediately and every time it was decanted into another barrel, its clarity and reflections increased”.
Tastings then followed and time continued to enrich the wine.
In May it was ready to be bottled
“It was a beautiful journey we took together, the wine expressed itself in its splendor and I accepted its suggestions and its evolution trying to satisfy its needs.”
Now another journey has begun, perhaps even more interesting, called “bottle refinement”: interweaving of aromas and flavors that will give emotions and thoughts to those who want to encounter this infinite magic. Thanks and credit to those who cultivated and cared for the grapes with such passion… the wine will give us back its gratitude for having loved and respected it.
